Recipe: Chitarra alla Teramana

The authentic flavor of Abruzzo

Among the most iconic dishes of Abruzzo cuisine, chitarra alla teramana represents a true hymn to tradition: simple, authentic, and deeply rooted in family roots.

In this recipe, we'll show you how to make it with the finest ingredients and all the artisanal quality of Pasta Zaccagni.

Main ingredients:

  • Zaccagni Pasta Guitar
  • Meatballs prepared according to tradition
  • Le Prunaie organic extra virgin olive oil
  • Quality tomato puree
  • Onion, fresh basil, grated parmesan cheese

Procedure:

Start by preparing the classic meatballs, small and tasty, as per the original Teramo recipe.

In a large skillet, heat a drizzle of Le Prunaie organic extra virgin olive oil, add the finely chopped onion, and sauté gently. Then, add the tomato puree, a few fresh basil leaves, and the meatballs. Let the sauce simmer over low heat to blend the flavors.
Meanwhile, cook the Zaccagni Chitarra, a handmade pasta with a rough surface perfect for holding sauces, in plenty of salted water. Drain al dente and toss directly into the pan with the sauce.

Stir in grated Parmesan cheese, serve carefully, and top each dish with a few meatballs.

A traditional dish that showcases Abruzzo, with authentic flavors and quality ingredients.

Enjoy your meal with Pasta Zaccagni!
